We celebrate Cinco de Mayo to commemorate May 5th, the day of the Mexican militia’s win at The Battle of Puebla in 1862 over the French. This year, how about a twist? A Mango twist! What dish can you create with Mango as its star? Will it be a salad? A dip/spread? A wrap? A pudding? A drink? Just be sure that mango is one of the main components of your creation.

An attempt to capture the essence of a traditional vietnamese recipe for Sweet and Sour Potatoes with Mangoes! The blend of spices with soy sauce, thai chillies, red pepper with mango and rice vinegar resulted into a winning recipe of baby potatoes cooked in sweet and sour sauce, and the addition of mango gave it just the right burst of flavor!
