No Croutons Required - April 2008

In anticipation of Spring, this month we would like participants to submit a soup or a salad featuring mushrooms of any variety. Though mushrooms are probably the meatiest of vegetarian fare, we do ask that you stick to the vegetarian theme, meaning no meat, poultry or seafood.

Rules

1. Post a recipe on your blog that fits the theme for this month's challenge.

2. Mention "No Croutons Required" in your post and link back to the host's post announcing the theme for the month. I will update this post each month so you know where to look. You are welcome to display the "No Croutons Required" logo if you like.

3. Email us the link to your submission:

Please include your name, the name of your blog, your location and the name of your dish, with any anecdotes.

4. Entries should be submitted no later than the 20th of the month. The roundup of entries will be posted a few days following the deadline for submissions. Readers are invited to vote for their favorite in the comment section or by email. The winning entry will be announced by the host the week after the roundup of entries has been posted. The winner will receive a plaque to display on their blog.
