No Croutons Required - The Potato Edition

This month is the Potato Edition of No Croutons Required. I would like you to make a soup or a salad featuring potatoes.

I am hoping that this challenge will appeal to everyone. Those experiencing the highest and those experiencing the lowest of temperatures just now.
